I got it almost 2 weeks ago and have already made lots of fun things.

Beef Taco Bake

I stumbled across this recipe last night 
and decided to give it a whirl.


  • 1 lb ground beef
  • 1 can Campbell's Condensed Tomato Soup
  • 1 cup chunky salsa
  • 1/2 cup milk
  • 6 (8-inch) flour tortillas, cut into 1 inch pieces
  • 1 cup shredded Cheddar cheese
  1. Cook the beef in a 10-inch skillet over medium-high heat until the beef is well browned, stirring frequently to break up meat.  Pour off any fat.
  2. Stir the soup, salsa, milk, tortillas and 1/2 cup of the cheese into a bowl.  Add the browned meat.  Spoon the mixture into a 2-qt shallow baking dish.  Cover.
  3. Bake at 400 degrees F. for 20 minutes.  Add the rest of the cheese and bake for an additional 10 minutes.
Makes: 4 Servings  
1 Serving = 10 Weight Watchers points
Optional:  Serve with a dollop of sour cream


TA-DA!  It was sooooo yummy!!!!  
We are having the left overs for dinner tomorrow night!

Sweet & Tangy Chicken

I made this meal yesterday.  It is a favorite in the Morrow house.

Here is the recipe:
1 lb chicken breast
1 cup sugar (I used Splenda)
1/4 cup flour
1 tsp salt
1/2 tsp pepper
2 cups water
1/2 cup soy sauce
1/2 cup vinegar
onion and/or garlic to taste

[If you want, saute the onion first.]
Brown chicken breast (do not cook the whole way through).  Mix sugar, flour, salt and pepper.  Stir in water, soy sauce, and vinegar.  Add to chicken.  Cover and boil then simmer for 25ish minutes.

Serve with rice.

**I cut the recipe in half last night for just me and Dean.  I didn't want left overs and there was just enough sauce for the 2 chicken breasts.**
